Paige turns 9!!!

Our baby girl turned 9 yesterday!!   Ya!!!  We celebrated with an ART Splatter painting party on Friday...So much Fun!!! ...Those photos I will have to post tomorrow!

We had the local family for dinner last night, we devoured roast beef, mashed potatoes and broccoli smothered in cheese sauce.  For dessert we savoured the blueberry creme brûlée cheese cake & ice cream cake.

Paige got so so spoiled, with sun hats, tons of clothes, a new apron, mall bucks, i-tunes cards for her new i-pod, the cutest new blue taffeta and black velvet dress, plus much much more!!!

WOW!!  Our Lucky girl is ending her school year on a very high note;-))

and Thank you so so so much to Ante (Paige's new spelling in her contact list) Jan - for all the clean-up!!  I have a few photos of you, elbow deep in hot soapy water - however, I know how you hate being on film...;-))  So I won't post! ;-))





 Nana Sue & Papa Tom should not use so much tape!!

A Healthy twist on the potato pancake!

Tonight I made the most delicious twist on a long time favourite - the potato pancake!!!


Preheat oven to 375'

Peel & Grate 1 yam,
Trim & Grate 1 zucchini,
Tim, peel and Grate 3 carrots,
~combine and squeeze out extra liquid in cheese cloth.

Next process 1/4 C unsalted sesame seeds and 1/4 C almonds

Combine all the above with 1/2 C spelt flour, 1 egg, 1 egg white, 1.5C cooked brown rice, the juice of one fresh lime, the juice of 1 fresh lemon, 1 TBSP of sesame oil, 1tsp of salt, 1 tsp pepper, 2 cloves of garlic pressed.

Mike together, make into patties and bake on a parchment lined cookie sheet for 40-45 minutes.

Tonight I served with a spoonful of plain greek yogurt, orange, ginger marinated chicken breasts, and fresh vegetables!

1 year ago...

One year ago I married the LOVE of of my LIFE!!!   Everyday I feel that I am truly the luckiest soul alive.  I can't wait to wake up next to my amazing husband, I can't wait to see him after our work day!   I can't wait to sit down for dinner and then tuck into bed!

Once in a lifetime someone comes into our life that we really connect with heart to heart....soul to soul.
A friendship develops and love follows.
With all my being I know that you are my "once in a lifetime" and each time I think of you I realize how lucky I am to have found you.  Thank you for all your love...thank you for all that you are....thank you for being part of my each and every day!

My husband woke me up this morning with a steaming cup aromatic coffee, and then re-recited his vows to me!  It was so incredibly heart warming, emotional, and special!

There is nothing to get my husband.....so I made a video of our day!!!  Ted is at baseball right now, coaching Taeya, so when he returns he will follow 20 post-it notes of love, down to our media room...where we will re-live our magical day!!!

Fresh Lake Trout Chowder!

Yummmy!!!   I'm not a huge fan of fish...however tonight I made the tastiest chowder!   Our amazing neighbours Bryan & Karen, went fishing today and brought us back three beautiful rainbow trout....so I had to cook them up, and as I cannot filet a fish to save my life I thought of something I could make, so that my fish filleting skills were not on the 'chopping block'!

I made two batches, as our neighbours do not eat meat, only fish.

I sauteed bacon (only in ours and with ALL of the fat cut off) combined onions, celery and carrots, until fragrant and soft.   In a separate pot I combined cubed red potatoes and whole garlic, then boiled until soft before adding fresh chunks of trout.  I also added 4 crab legs - shell and all, to simmer for 5 minutes.   I then removed the crab legs, pulled the meat out and added just the crab flesh back into the stew.  I then added the saute mixture and cut off fresh corn kernels from the cob to add.  I let simmer away for 30 minutes.  After the soup was flavoured with S&P and fresh lemon balm, I turned off the heat.   I then added evaporated milk to add a creamy goodness!!

And served!!  Very Tasty!!!

1950's day!

The girls school had 1950's day on Friday!   They looked so cute!  I did T's hair with hot rollers giving her a flirty 50's hair style.  Paige had a high pony with curler rolled bangs!!  Both girls had huge poofy crinolines under their dresses....although they do not look that big in the photo!

They had a great time!!
