Camelback Mountain

Ted and I try to hike Camelback every time we come down to AZ without the girls...as it is intense!!   The rock stairs are at my knee level and it is a straight uphill grind!!  Crazy!  Here is the view at one of the outlook points...next time I'll take pics from the helicopter pad...which is as far as we go for now - after that it is like climbing a ladder and we are not quite ready for that challenge!!

Last minute Treasures

For our last morning on the Island we got up early to search for last minute treasures to bring home to the Okanagan.  The tide was out, the weather was crisp and we had our new wool toques on that Nanny knit!

My Dragonfly

I went for a walk in the park today!   I had a very peaceful time...I Love the fall, the colours, the crisp air.   I have a few more fav's to post later today...but for now I leave you with this...to me...it looks like a dragonfly.
I think of my dad every time I have a dragonfly around.  Not because he liked them - but after he passed away I would have one popping in from time to time.  When My mom, brother, sister and I went to the beach to read all the cards from everyone, a dragonfly was there...then the helicopter (which kinda looks like a dragonfly - LOL)  then my mom opened a card and someone gifted her a glass hanging dragonfly.  Now when I'm alone and talking to my dad I see a dragonfly...and although I did not see one today while I was talking to dad on mom's birthday... I got home and this is the photo I saw  -  what do you all think??  A simple berry or a dragonfly??

1st night of the Season at Big White!

Last night we went up to Big White, to check on our condo - we made it up just in time for sunset - but by the time we got up to our suite and I got my camera out ... it's magic had faded.  I had to post today as our internet was down last night.   We both enjoyed a quiet romantic night with great views and a game of cards.

Happy Hunting!

After years of not hunting, my husband is going out to catch something!  I'm not a hunter myself - but I'm looking forward to having fresh wild game!   Good luck my love!

Sparkling Hills treat

So for my SIL Tanya's birthday we went to Sparkling Hills Spa!   We had an amazing time with saunas pools, great wine and amazing food!   Go and spend an amazing time there - you will not be disappointed!!

The rain rolled in like a stage curtain giving way to a fantastic storm, backlit by the sun, captured through my lens!  Let the storm season continue!

Russian Borscht

Russian Borscht!

Ingredients:

olive oil
10 medium sized borscht
3 carrots ( Grated)
2 medium onions (chopped)
Russian potatoes (chopped bite size)
1/2 head of cabbage ( I used an asian cabbage because I like the flavour and texture more then the more common head of cabbage)
Chicken stock
A can of Red Kidney beans
Peppercorns (I used pink)
2 TBSP on ketchup
bay leaves

Scrub beets well, place in a pot of water, boil beets for 1 hour in the water.  Pull beets out of the water and let cool so you can slice- SAVE WATER - to use as your broth.

Combine olive oil, chopped onion, chopped cabbage and grated carrots, saute until soft, then stir in ketchup.  While these ingredients are sautéing, add bay leafs, chicken stock powder (to taste) crushed peppercorns, potatoes and kidney beans to beet water.  Chop cooked beets into chunks or sticks and add into soup pot with the celery, onion and carrot mixture.  Let simmer for an hour - or until potatoes are soft and flavours have infused.

Serve with a dollop of sour cream (or I use plain greek yogurt)

Enjoy!!!
