Tomato Soup!

I LOVE tomatoes,  so the amount that we are away, I have lots in the freezer!   When we leave I quarter tomatoes and freeze in siplock.   Last night I took them out of the freezer and let them defrost in the fridge.  Today I'm roasting with two heads of garlic, EVOO, and spices.  After oven roasting in the oven for over an hour I will add them to sauteed onions and add chicken broth, simmer for a couple of hours....then puree!   I can't wait!
